  • 1 medium yellow onion, finely diced
  • 4 cloves garlic, minced
  • 1 pound Italian sausage (mild or hot), removed from casing
  • 1 can (28-ounce) crushed tomatoes
  • 2 tablespoons tomato paste
  • 4 cups beef or vegetable broth (low sodium)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup fresh ricotta cheese
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium-high heat until it shimmers.
  2. Add diced onion and a pinch of salt; cook for 3-4 minutes until translucent. Add minced garlic and stir for 30 seconds.
  3. Add Italian sausage, breaking it up with a spoon. Cook for 5-7 minutes until fully browned. Drain excess grease if necessary.
  4. Stir in tomato paste, oregano, basil, and red pepper flakes. Cook for 1 minute to toast the spices.
  5. Pour in crushed tomatoes and broth. Scrape the bottom of the pot to release browned bits. Bring to a boil.
  6. Reduce heat to medium-low and simmer uncovered for 10 minutes to thicken the sauce.
  7. Add broken lasagna noodles to the simmering soup. Stir to prevent sticking, cover, and cook for 8-10 minutes until noodles are tender.
  8. While noodles cook, whisk ricotta cheese with a pinch of salt and a drizzle of olive oil until smooth.
  9. Taste soup and adjust seasoning with salt and pepper. Turn off the heat.
  10. Ladle soup into bowls. Top each serving with a dollop of ricotta mixture, fresh parsley, and grated Parmesan cheese. Serve immediately.

Notes

The noodles will continue to absorb liquid as they sit, so serve immediately for the best texture. If storing leftovers, add a splash of broth or water when reheating to loosen the soup. For a vegetarian version, swap sausage for lentils or mushrooms. For gluten-free, use GF lasagna noodles.
