Best Easy Ground Beef and Rice Skillet Recipe

This one-pan ground beef and rice skillet is a quick, comforting weeknight dinner made with simple pantry ingredients. It’s hearty, flavorful, and comes together in about 30 minutes.

  • 1 pound ground beef (85% lean)
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 1 cup long-grain white rice (uncooked)
  • 2 cups low-sodium beef broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 teaspoon paprika (smoked preferred)
  • 1 teaspoon dried oregano
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • Fresh parsley or cilantro, chopped (for garnish)
  • Shredded cheddar cheese (for garnish)
  • Sour cream or Greek yogurt (for garnish)

Instructions

  1. Heat the oil in a large skillet over medium-high heat. Add the diced onion and bell pepper; sauté for 3-4 minutes until onion is translucent and pepper softens.
  2. Add the minced garlic and cook for 30 seconds, stirring constantly.
  3. Add the ground beef and break it into crumbles. Let it cook undisturbed for 2 minutes to sear, then stir and cook until no longer pink, about 5-6 minutes. Spoon out excess grease if desired.
  4. Sprinkle paprika, oregano, cumin, salt, black pepper, and red pepper flakes (if using) over the beef. Stir and cook for 1 minute to bloom the spices.
  5. Add the uncooked rice, beef broth, and diced tomatoes (with juices). Stir well, scraping up any browned bits from the bottom of the pan.
  6. Bring to a rolling boil over high heat, about 2-3 minutes. Stir once.
  7. Reduce heat to low, cover with a tight-fitting lid, and simmer for 18-20 minutes. Do not lift the lid during this time.
  8. After 18 minutes, remove the lid carefully. The rice should be tender and most liquid absorbed. If still soupy, cook uncovered for 2-3 more minutes. If rice is firm, add 2 tablespoons water, cover, and cook 3 more minutes.
  9. Remove from heat, fluff rice with a fork, and let rest covered for 5 minutes.
  10. Garnish with fresh parsley or cilantro, shredded cheese, and/or sour cream. Serve hot.

Notes

For best texture, use long-grain rice. Do not lift the lid during simmering. Let the rice rest covered for 5 minutes after cooking. Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months. Reheat in a skillet with a splash of broth.
