  • 1 cup (240ml) milk (whole, oat, or almond)
  • ½ cup (120g) plain Greek yogurt
  • ½ cup (120g) pumpkin puree (100% pumpkin, not pie filling)
  • 2 tablespoons (30ml) maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves
  • Pinch of black pepper
  • Optional toppings: chopped pecans or walnuts, dried cranberries or raisins, extra maple syrup, dollop of yogurt

Instructions

  1. In a small bowl, combine the cinnamon, ginger, nutmeg, cloves, and black pepper. Whisk with a fork until evenly distributed.
  2. In a larger bowl or directly in a mason jar, whisk together the milk, Greek yogurt, pumpkin puree, and maple syrup until fully incorporated with no orange streaks.
  3. Add the rolled oats and chia seeds (if using). Sprinkle the spice blend over everything and stir well until every oat is coated.
  4. Divide the mixture evenly among four 8-ounce mason jars or airtight containers. Each jar should be about ⅔ full.
  5. Seal the jars tightly and refrigerate for at least 6 hours or overnight. The oats will absorb the liquid and soften, and the flavors will meld.
  6. In the morning, stir the oats. Add a splash of milk if too thick. Top with desired toppings and serve cold, or let sit at room temperature for 10 minutes if preferred.

Notes

For best texture, use rolled oats (not instant or steel-cut). A pinch of black pepper enhances the pumpkin flavor without adding heat. If the oats are too thick in the morning, stir in a splash of milk. If too thin, reduce milk by 2-3 tablespoons next time. The oats keep in the fridge for up to 5 days. To eat warm, microwave a jar (lid off) for 30-45 seconds, stirring halfway.
