Instructions

  1. Whisk the dry ingredients together: In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
  2. Cream the butter and sugar: In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes with an electric mixer on medium speed. Scrape down the sides and bottom of the bowl.
  3. Add the wet ingredients: Beat in the eggs one at a time, mixing well after each addition. Add the vanilla extract, red food coloring, and vinegar. Mix until everything is combined and the color is uniform.
  4. Combine wet and dry: Gradually add the dry ingredients to the wet mixture, mixing on low speed or folding by hand with a spatula. Mix just until no streaks of flour remain. The dough will be soft and slightly sticky.
  5. Chill the dough: Cover the bowl with plastic wrap and refrigerate for at least 1 hour (or up to overnight).
  6. Preheat and prep: About 15 minutes before baking, preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  7. Roll the dough balls: Place the powdered sugar in a small bowl. Using a cookie scoop or your hands, shape the chilled dough into 1.5-tablespoon balls (about the size of a walnut). Roll each ball between your palms until smooth, then roll it in the powdered sugar until completely coated. Place on prepared baking sheets, spacing them about 2 inches apart.
  8. Bake: Bake for 10-12 minutes. The cookies should look puffed and cracked, with the edges set but the centers still slightly soft.
  9. Cool: Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire cooling rack to cool completely.

Notes

Chilling the dough is non-negotiable for proper crackle. Roll dough balls twice in powdered sugar for a thicker coating. Cookies taste even better the day after baking. Store in an airtight container at room temperature for up to 5 days. Freeze baked cookies for up to 3 months.
