Ingredients

Scale
  • 8 oz Genoa Salami, sliced thin
  • 4 oz Prosciutto, paper-thin slices
  • 6 oz Pepperoni (mini pepperoni recommended)
  • 4 oz Capicola (optional, or use soppressata)
  • 8 oz Aged Cheddar, cubed or sliced
  • 6 oz Smoked Gouda, sliced into thin wedges
  • 6 oz Brie, at room temperature
  • 6 oz Pepper Jack, cut into small wedges
  • 1 bag Pretzel Crisps (Snyder’s recommended)
  • 1 box Water Crackers
  • 1 small Baguette, sliced into thin rounds (toasted if desired)
  • 1 bag Pita Chips
  • 1 cup Red Grapes, seedless
  • 1/2 cup Cornichons
  • 1/2 cup Kalamata Olives, pitted
  • 1 cup Cherry Tomatoes, halved
  • Honey, for drizzling
  • 1/4 cup Whole Grain Mustard
  • 1/2 cup Ranch Dip (Hidden Valley packet mixed with sour cream)
  • Fresh Rosemary or Thyme sprigs (for garnish, optional)
  • Edible Flowers (optional)

Instructions

  1. Set the stage (5 minutes): Place your board on a clean, flat surface. Put small bowls in the corners or along the edges for dips and wet ingredients. Fill one bowl with ranch dip, one with whole grain mustard, and one with honey. Arrange them evenly spaced.
  2. Add the cheese first (5 minutes): Unwrap cheeses and place them around the board. Put brie in the center. Cut cheddar into cubes or thin triangles. Slice smoked gouda into thin wedges. Leave pepper jack in a small block. Space cheeses out so there’s a pocket of cheese in every section.
  3. Layer the meats (4 minutes): Fold salami slices into quarters or roll into cylinders. Arrange in a small pile near cheddar. Drape prosciutto in loose, wavy ribbons. Scatter pepperoni in a separate cluster. If using capicola, fold into loose rolls and place near pepper jack.
  4. Fill in with carbs (3 minutes): Pour pretzel crisps into a small stack on one side. Fan out water crackers in a neat row. Arrange baguette slices in a small pile near brie. Add pita chips in a cluster near ranch dip.
  5. Add the fresh and pickled elements (3 minutes): Tuck red grapes into empty spaces. Scatter cornichons in a small pile near salami. Drop kalamata olives into a little cluster (or keep in a small bowl). Place halved cherry tomatoes near prosciutto.
  6. Garnish and final touches (2 minutes): Drizzle honey over brie or smoked gouda. Sprinkle fresh thyme or rosemary sprigs around the board. Fill any obvious gaps with extra crackers or grapes.

Notes

Don’t stress about perfection; the board will get messy quickly. Bring cheese to room temperature for best flavor. Use small bowls for anything wet to avoid spills. Prep all ingredients before arranging. The board is best served at room temperature; let it sit out for 15 minutes after assembling. Leftovers can be stored separately in airtight containers for 3-4 days.
