Ingredients

Scale
  • 6 medium apples, peeled, cored, and sliced (about 6 cups)
  • 1/4 cup granulated sugar
  • 2 tablespoons light brown sugar, packed
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg, freshly grated if possible
  • 2 tablespoons all-purpose flour
  • Pinch of salt
  • 1/2 cup unsalted butter
  • 3/4 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven.
  2. Brown the butter: In a medium saucepan over medium heat, melt 1/2 cup of unsalted butter. Stir constantly with a wooden spoon. The butter will foam up, then subside, and you’ll see brown specks forming at the bottom. This takes about 5-7 minutes. When it smells nutty and looks golden amber, remove it from the heat immediately. Pour it into a heatproof bowl to stop the cooking process.
  3. Prepare the apple filling: While the butter cools slightly, peel, core, and slice your apples into 1/4-inch thick slices. In a large mixing bowl, combine the sliced apples with 1/4 cup granulated sugar, 2 tablespoons light brown sugar, 1 tablespoon lemon juice, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, 2 tablespoons flour, and a pinch of salt. Toss everything together until the apples are evenly coated. Let this sit while you make the streusel.
  4. Make the oat streusel: In a medium bowl, whisk together 3/4 cup rolled oats, 1/2 cup flour, 1/2 cup light brown sugar, 1/4 cup granulated sugar, 1 teaspoon cinnamon, and 1/4 teaspoon salt. Pour the browned butter over the dry ingredients and stir with a fork until the mixture forms clumps. It should look like wet sand with some pea-sized chunks.
  5. Assemble the crisp: Pour the apple mixture into your greased 9×13 baking dish and spread it into an even layer. Sprinkle the oat streusel evenly over the top. Don’t press it down.
  6. Bake: Place the dish on a baking sheet to catch any drips. Bake for 35-40 minutes, or until the filling is bubbling around the edges and the streusel is golden brown. If the top is browning too quickly, tent it loosely with foil for the last 10 minutes.
  7. Cool: Let the crisp cool on a wire rack for at least 15-20 minutes before serving.

Notes

For best results, use a mix of Honeycrisp and Granny Smith apples. Brown the butter in a light-colored pan to monitor color change. Let the apples macerate while making the streusel to create a natural syrup. Cool for at least 15-20 minutes before serving to allow the filling to set.
