  • 8 oz (225g) cream cheese, softened
  • 1/2 cup (120ml) sour cream
  • 2 cups (200g) shredded cheddar cheese
  • 1 cup (100g) shredded Monterey Jack cheese
  • 10 oz (285g) canned diced tomatoes with green chiles (Rotel), drained
  • 15 oz (425g) can black beans, drained and rinsed
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Tortilla chips for serving
  • Optional toppings: diced avocado, sliced jalapeños, chopped cilantro, diced red onion, lime juice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brown the ground beef in a large skillet over medium-high heat for 5-7 minutes, breaking it apart. Drain excess grease, leaving about 1 tablespoon.
  3. Reduce heat to medium, add diced onion, and cook for 3-4 minutes until translucent. Add minced garlic and cook for 30 seconds until fragrant.
  4. Season the beef mixture with chili powder, cumin, smoked paprika, salt, and pepper. Stir and cook for 1 minute to toast the spices.
  5. In a mixing bowl, combine softened cream cheese and sour cream until smooth.
  6. Spread the cream cheese mixture evenly in the bottom of a 9×9-inch baking dish.
  7. Top with the seasoned ground beef mixture, spreading evenly. Sprinkle drained Rotel tomatoes and black beans over the beef.
  8. Sprinkle shredded cheddar and Monterey Jack cheeses evenly over the top.
  9. Bake for 15-20 minutes until the cheese is melted and bubbly. For a golden top, broil for the last 2 minutes, watching closely.
  10. Let the dip rest for 5 minutes before serving.
  11. Add fresh toppings like diced avocado, sliced jalapeños, chopped cilantro, and a squeeze of lime juice. Serve with tortilla chips.

Notes

For best results, grate your own cheese from a block to avoid anti-caking agents. Drain the canned tomatoes well to prevent a watery dip. Let the dip rest for 5 minutes after baking to set. To keep warm during a party, transfer to a slow cooker on the warm setting.
