This marinated cherry tomato salad with feta is a quick, easy, and crowd-pleasing summer dish. Tomatoes are marinated in a garlicky, herby vinaigrette, then tossed with creamy feta and fresh herbs for a vibrant, flavorful salad.

  • 2 pints (about 600g) cherry tomatoes, halved
  • 8 oz (225g) feta cheese, cut into 1/2-inch cubes
  • 1/4 cup (60ml) extra-virgin olive oil
  • 2 tablespoons (30ml) red wine vinegar
  • 2 cloves garlic, minced
  • 1/4 cup (15g) fresh basil, thinly sliced
  • 2 tablespoons (8g) fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper, freshly cracked

Instructions

  1. Wash and dry cherry tomatoes thoroughly. Cut each one in half through the equator. Place in a medium mixing bowl.
  2. In a small bowl or jar, combine olive oil, red wine vinegar, minced garlic, salt, and pepper. Whisk vigorously for about 30 seconds until emulsified.
  3. Pour the dressing over the halved tomatoes. Gently toss with a rubber spatula to coat. Cover and let marinate at room temperature for at least 30 minutes.
  4. While tomatoes marinate, cut feta block into 1/2-inch cubes. Set aside.
  5. After marinating, gently fold in feta cubes, basil, and parsley until just combined.
  6. Let the salad rest for another 10 minutes at room temperature.
  7. Transfer to a serving bowl or platter. Drizzle any remaining marinade over the top. Garnish with extra basil leaves if desired.

Notes

Use room temperature tomatoes for better marinade absorption. Don’t overdress; tomatoes release their own juices. Feta is salty, so salt strategically. Best within 2-3 hours of making. For make-ahead, marinate tomatoes separately and add feta and herbs just before serving.
