Ingredients

Scale
  • 3 cups mini pretzels
  • 1 cup raw pumpkin seeds (pepitas)
  • 1 cup raw pecans, roughly chopped
  • 1/2 cup dried cranberries (unsweetened preferred)
  • 1/2 cup unsweetened coconut chips (optional)
  • 3 tablespoons pure maple syrup
  • 2 tablespoons coconut oil (melted; or butter)
  • 1 teaspoon vanilla extract (pure)
  • 1 teaspoon ground cinnamon (Saigon recommended)
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg (freshly grated preferred)
  • 1/4 teaspoon sea salt (plus more for sprinkling)

Instructions

  1. Preheat your oven to 325°F (160°C) and line a large rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, combine 3 cups mini pretzels, 1 cup raw pumpkin seeds, 1 cup chopped pecans, 1/2 cup dried cranberries, and 1/2 cup coconut chips (if using). Toss to distribute evenly.
  3. In a small saucepan over low heat, combine 3 tablespoons maple syrup, 2 tablespoons melted coconut oil, and 1 teaspoon vanilla extract. Whisk until smooth and warm (about 1-2 minutes). Do not let it boil. Remove from heat and stir in 1 teaspoon cinnamon, 1/2 teaspoon ginger, 1/4 teaspoon nutmeg, and 1/4 teaspoon sea salt.
  4. Pour the warm coating over the dry ingredients and stir with a wooden spoon or silicone spatula until everything is evenly coated.
  5. Spread the mixture in a single layer on the prepared baking sheet. Press down gently with the back of a spatula.
  6. Bake for 12-15 minutes, stirring halfway through (at the 7-minute mark).
  7. Remove from the oven and let cool completely on the baking sheet (at least 20-30 minutes). Do not stir while warm.
  8. Once completely cool, break into clusters with your hands. Transfer to an airtight container or serve immediately.

Notes

Let the snack mix cool completely before storing to ensure crunchiness. For best flavor, make a day ahead. Store in an airtight container at room temperature for up to 2 weeks. For a gluten-free version, use gluten-free pretzels. For a nut-free version, replace pecans with additional pumpkin seeds or roasted chickpeas.
