  • 2 tablespoons (30 ml) pumpkin puree (100% pumpkin, not pie filling)
  • 2 tablespoons (30 ml) maple syrup or honey
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla extract (pure)
  • 1 chai tea bag (Tazo or Twinings recommended)
  • 1/4 cup (60 ml) hot water
  • 1 shot (1 ounce or 30 ml) espresso or 1/4 cup (60 ml) strong brewed coffee (optional)
  • Whipped cream (optional, for topping)
  • Pinch of pumpkin pie spice or cinnamon (optional, for topping)
  • Caramel drizzle (optional, for topping)

Instructions

  1. Steep the chai tea: In a small cup, pour 1/4 cup (60 ml) of hot water. Add the chai tea bag and let it steep for 3–5 minutes. Remove the tea bag and set the concentrated chai aside.
  2. Blend the pumpkin mixture: In a small bowl, combine 2 tablespoons (30 ml) of pumpkin puree with 1 tablespoon of hot water. Whisk until smooth.
  3. Heat the milk: Pour 1 cup (240 ml) of milk into a small saucepan. Warm it over medium heat, stirring occasionally, until steaming but not boiling (about 2–3 minutes).
  4. Add the pumpkin and spices: Whisk in the smooth pumpkin mixture, 2 tablespoons (30 ml) of maple syrup, 1/2 teaspoon of pumpkin pie spice, and 1/4 teaspoon of vanilla extract. Keep whisking until fully combined and lightly frothy.
  5. Combine with chai and coffee: Pour the steeped chai concentrate into your mug. If using espresso or strong coffee, add it now. Then pour the warm pumpkin milk over the top. Stir gently to combine.
  6. Top and serve: If desired, add whipped cream, a sprinkle of pumpkin pie spice or cinnamon, and a caramel drizzle. Serve immediately.

Notes

For a smoother texture, whisk the pumpkin puree with hot water before adding to the milk. Use a thermometer to avoid scalding the milk (aim for 150–155°F). Double the chai tea bag for a stronger spice kick. To make it iced, brew the chai concentrate, let it cool, and pour over ice with cold milk and the pumpkin mixture. Batch prep the pumpkin spice mix for convenience.
