  • 1 can (15 ounces) diced tomatoes, undrained (fire-roasted or Rotel with green chiles optional)

Instructions

  1. Brown the beef: Place a large pot over medium-high heat. Add the ground beef and break it apart with a wooden spoon. Cook for 6-8 minutes, stirring occasionally, until fully browned and no longer pink. Drain excess fat if needed, leaving a little for flavor.
  2. Add the taco seasoning: Sprinkle the taco seasoning packet over the browned beef. Stir well to coat every piece. Cook for about 1 minute, stirring constantly, until fragrant.
  3. Add the canned ingredients: Pour in the drained black beans, drained corn, and undrained diced tomatoes. Stir until well combined.
  4. Add water or broth (optional): For a soupier consistency, add 1 to 2 cups of water or beef broth. Stir to combine. For a thicker, chili-like consistency, skip the extra liquid.
  5. Simmer: Bring the soup to a gentle boil, then reduce heat to low. Cover and let simmer for 15-20 minutes, stirring occasionally.
  6. Taste and adjust: Add salt and pepper if needed (taco seasoning usually provides enough salt). For more heat, add hot sauce or cayenne. For more acidity, add a squeeze of lime juice.
