  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup (100g) granulated sugar (for coating)
  • 2 teaspoons ground cinnamon (for coating)
  • 2 tablespoons unsalted butter, melted (for coating)
  • Vegetable oil for frying

Instructions

  1. Pour 2 cups of apple cider into a small saucepan and bring to a boil over medium-high heat. Reduce to a simmer and cook until reduced to about 1/2 cup. Let cool completely.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla and cooled reduced cider. Mix until combined.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  5. Cover the bowl with plastic wrap and refrigerate the dough for 30 minutes to firm up.
  6. On a lightly floured surface, roll the dough to about 1/2-inch thickness. Use a donut cutter to cut out shapes and reroll scraps gently.
  7. Pour oil into a heavy pot or Dutch oven to a depth of 2-3 inches and heat to 350°F (175°C).
  8. Carefully place 2-3 donuts into the hot oil. Fry for 1-2 minutes on each side until golden brown. Turn once.
  9. Remove donuts with a slotted spoon and drain on a paper towel-lined plate.
  10. While still warm, dip donuts in melted butter, then roll them in the mixture of granulated sugar and cinnamon.

Notes

Ensure the oil temperature stays at 350°F (175°C) to prevent greasy or undercooked donuts. Do not overmix the dough to avoid tough donuts. Chill the dough before rolling to make it easier to handle. For best results, use 100% pure apple cider with no added sugar.
