  • 6 tablespoons unsalted butter, browned
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar, divided
  • 1/4 cup brown sugar

  • 3/4 cup whole milk, room temperature
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your baking dish or cast-iron skillet with butter or non-stick spray.
  2. In a medium saucepan, melt 6 tablespoons of unsalted butter over medium heat. Stir frequently as it foams and turns a golden brown with a nutty aroma (about 4-5 minutes). Remove from heat and set aside to cool slightly.
  3. In a mixing bowl, combine sliced peaches, 1/4 cup granulated sugar, 1 tablespoon lemon juice, and 1/2 teaspoon cinnamon if using. Toss gently to coat and let sit while preparing the batter.
  4. In a large bowl, whisk together 1 cup all-purpose flour, 1/2 cup granulated sugar, 1/4 cup brown sugar, 1 teaspoon baking powder, and 1/4 teaspoon salt.
  5. Add the slightly cooled browned butter, 3/4 cup milk, and 1 teaspoon vanilla extract to the dry ingredients. Stir gently until just combined; do not overmix.
  6. Pour the batter evenly into the prepared baking dish. Spoon the peach mixture evenly over the batter; peaches will sink slightly.
  7. Bake for 40-45 minutes until the top is golden brown and a toothpick inserted into the batter comes out clean or with a few moist crumbs.
  8. Let the cobbler rest for 10 minutes before serving warm with generous scoops of vanilla ice cream.

Notes

If batter is too thick after adding browned butter, add a splash more milk. Tent with foil after 30 minutes if top browns too fast. Blanch peaches in boiling water for 30 seconds then plunge into ice water to peel easily. Avoid overmixing batter to keep cobbler tender.
