A creamy, flavorful white chicken chili made in a slow cooker with tender chicken, white beans, corn, and a fresh lime twist. Perfect for cozy winter meals and easy to prepare with pantry staples.

  • 1.5 pounds boneless, skinless chicken breasts
  • 2 cans (15 ounces each) white beans (great Northern or cannellini), one can blended, one can whole
  • 1 cup frozen corn (150 grams)
  • 3 cups low-sodium chicken broth (720 ml)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (4 ounces) diced green chilies
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • Juice of 1 large lime (about 2 tablespoons)
  • Salt and black pepper to taste
  • Sour cream or Greek yogurt (optional, for serving)

Instructions

  1. Trim any excess fat from chicken breasts and pat dry (5 minutes).
  2. Finely chop onion and mince garlic cloves (5 minutes).
  3. Place chicken breasts at the bottom of the slow cooker. Add white beans, frozen corn, diced green chilies, chopped onion, and minced garlic. Pour in chicken broth. Season with ground cumin, dried oregano, salt, and pepper (5 minutes).
  4. Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours until chicken reaches 165°F and is tender enough to shred (2-6 hours).
  5. Remove chicken breasts and shred with two forks. Return shredded chicken to the slow cooker (5 minutes).
  6. Using an immersion blender, puree about half the beans and broth mixture until smooth. Alternatively, blend half the chili in a regular blender and stir back in (5 minutes).
  7. Stir in lime juice. Taste and adjust salt and pepper as needed (2 minutes).
  8. Simmer chili uncovered on low for 15 minutes to thicken and meld flavors (15 minutes).
  9. Serve in bowls topped with sour cream or Greek yogurt if desired. Garnish with fresh cilantro or sliced jalapeños if using (5 minutes).

Notes

If chili is too thick after blending, add a splash of broth or water to loosen. Add lime juice at the end to keep brightness. Use low-sodium broth to control salt. Chicken thighs can be substituted for juicier meat. For dairy-free option, use coconut yogurt instead of sour cream. Leftovers reheat well; add broth when reheating to loosen chili.
