Cozy Fresh Tomato Basil Soup with Easy Grilled Cheese Dippers

  • 4 cloves garlic, peeled and left whole
  • 1 medium yellow onion, roughly chopped
  • 2 tablespoons olive oil
  • ½ teaspoon salt, plus more to taste
  • ¼ teaspoon black pepper
  • 2 cups vegetable broth (low-sodium)
  • ¼ cup fresh basil leaves, packed, plus extra for garnish
  • 2 tablespoons unsalted butter
  • ¼ cup heavy cream (optional)
  • 1 teaspoon sugar
  • 8 slices sourdough bread
  • 4 tablespoons unsalted butter, softened
  • 2 cups shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Line your baking sheet with parchment paper for easier cleanup.
  2. Roast the tomatoes and garlic: Place the halved Roma tomatoes cut-side up on the baking sheet. Tuck the whole garlic cloves in between the tomatoes. Drizzle everything with olive oil, then sprinkle with salt and pepper. Roast for 30-35 minutes until the tomatoes are soft, slightly caramelized, and the edges are just starting to brown.
  3. While the tomatoes roast, prep your onion: Rough chop the yellow onion—it doesn’t need to be pretty since it’ll get blended later. Set it aside.
  4. Sauté the onion: Once the tomatoes come out of the oven, heat your large pot over medium heat. Add the 2 tablespoons of butter and let it melt. Add the chopped onion and cook for 5-6 minutes until it’s soft and translucent, stirring occasionally. Don’t let it brown.
  5. Add the roasted tomatoes and garlic: Carefully scrape all the roasted tomatoes and garlic into the pot with the onions. Include any juices from the baking sheet. Stir everything together and let it cook for 2 minutes.
  6. Add the broth and simmer: Pour in the vegetable broth, add the sugar, and stir. Bring the soup to a gentle boil, then reduce the heat to low. Let it simmer uncovered for 15 minutes.
  7. Blend the soup: Remove the pot from heat. Add the fresh basil leaves. Using an immersion blender, blend until completely smooth. If using a regular blender, let the soup cool for 10 minutes first, then blend in batches. Be careful—hot liquid is dangerous.
  8. Finish the soup: Return the blended soup to low heat. Stir in the heavy cream (if using). Taste and adjust seasoning—you might want another pinch of salt or a crack of pepper. Keep warm while you make the dippers.
  9. Make the grilled cheese dippers: Heat a large skillet or griddle over medium heat. Butter one side of each bread slice. Place 4 slices butter-side down on a plate. Divide the shredded cheddar and mozzarella evenly among those 4 slices. Top with the remaining bread slices, butter-side up.
  10. Cook the sandwiches: Place sandwiches in the hot skillet. Cook for 3-4 minutes per side until the bread is golden brown and the cheese is fully melted. Press down gently with your spatula for even browning. Cut each sandwich into 4-5 strips for dipping.
  11. Serve immediately: Ladle the soup into bowls, garnish with fresh basil leaves, and arrange the grilled cheese strips alongside. Dip, crunch, and enjoy the moment.

Don’t skip roasting the tomatoes—it concentrates flavor and adds sweetness. Watch acidity; add sugar to balance if needed. For perfect grilled cheese, use room temperature butter and medium heat.
