  • ¼ cup (30g) powdered sugar
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • ¾ cup (240ml) pure maple syrup
  • ½ cup (100g) light brown sugar, packed
  • 2 large eggs, room temperature
  • 2 tablespoons (30ml) bourbon
  • ¼ cup (½ stick or 56g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 2 cups (200g) pecan halves

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on all sides.
  2. In a medium bowl, whisk together flour, powdered sugar, and salt. Cut in cold butter using a pastry cutter or fork until mixture resembles coarse meal with pea-sized butter pieces. Add vanilla and mix with hands until dough just comes together.
  3. Press crust evenly into prepared pan. Prick with a fork. Bake for 12-14 minutes until just set and edges are lightly golden. Set aside to cool slightly.
  4. In a medium bowl, whisk eggs until frothy. Add maple syrup and brown sugar, whisk until smooth. Add bourbon, melted butter, vanilla, and salt; whisk until combined.
  5. Spread pecan halves evenly over warm crust. Pour filling over pecans. Gently tilt pan to distribute.
  6. Bake for 25-30 minutes until edges are set and center is slightly jiggly. Cool completely in pan on a wire rack (2-3 hours).
  7. Use parchment overhang to lift bars out. Cut into squares with a sharp knife, wiping blade clean between cuts.

Notes

Toast pecans at 350°F for 5-7 minutes for deeper flavor. Use room temperature eggs to prevent butter from seizing. Let bars cool completely before cutting to avoid runny filling. Bars taste even better the next day.
