Instructions

  1. Sauté the Aromatics: Heat olive oil in a large skillet over medium heat. Add diced onion and cook until soft and translucent, about 3-4 minutes. Add minced garlic and jalapeño (if using) and cook for another minute until fragrant.
  2. Layer the Slow Cooker: Transfer the sautéed onion mixture to your slow cooker. Place chicken breasts on top, then add drained beans, diced green chiles, cumin, oregano, chili powder, and a generous pinch of salt and pepper. Pour chicken broth over everything. Do not stir.
  3. Slow Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is tender and shreds easily.

If using dried beans, soak 1 cup of dried cannellini beans overnight, then add to slow cooker with an extra cup of broth and cook on low for 7-8 hours. For a dairy-free version, use full-fat coconut milk instead of cream cheese and sour cream. To thicken chili, mash some beans against the side of the slow cooker before adding cream cheese mixture.
