This creamy, cozy white chicken chili came together by accident but has become a Friendsgiving favorite. It’s quick, easy, and packed with tender chicken, white beans, and a gentle warmth from green chiles.

  • 1 large yellow onion, diced (about 1 ½ cups)
  • 4 cloves garlic, minced
  • 1 ½ teaspoons ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon salt

  • 3 cups cooked, shredded chicken (about 1 ½ pounds)
  • 4 cups low-sodium chicken broth
  • 2 cans (15 ounces each) cannellini beans, drained and rinsed
  • 1 can (4 ounces) diced green chiles
  • ½ cup heavy cream
  • ½ cup shredded Monterey Jack cheese (optional topping)
  • ¼ cup sour cream (optional topping)
  • 2 tablespoons fresh cilantro, chopped (optional topping)
  • 1 avocado, diced (optional topping)
  • Lime wedges (optional topping)
  • Tortilla chips or crusty bread (optional serving)

Instructions

  1. Heat the olive oil in a large Dutch oven over medium heat. Add the diced onion and cook for 4-5 minutes until soft and translucent.
  2. Add the minced garlic, cumin, oregano, salt, and pepper. Stir constantly for about 1 minute until fragrant.
  3. Pour in the chicken broth and bring to a gentle boil. Scrape up any browned bits from the bottom of the pot. Let boil for 2-3 minutes.
  4. Reduce heat to low and stir in the shredded chicken, drained beans, and diced green chiles. Simmer for 10 minutes.
  5. Slowly pour in the heavy cream while stirring gently. Simmer for another 5 minutes, being careful not to let it boil hard.
  6. Taste and adjust seasoning, adding more salt or a pinch of cayenne if desired.
  7. Remove from heat and let rest for 5 minutes to allow flavors to meld and chili to thicken slightly.
  8. Ladle into bowls and top with desired toppings such as Monterey Jack cheese, sour cream, cilantro, avocado, lime wedges, and tortilla chips.

Don’t skip the sauté step—it builds flavor. Use rotisserie chicken for convenience. Watch the heat when adding cream to prevent curdling. Let chili rest before serving.
