  • 1 cup (100g) sharp cheddar cheese, shredded
  • ½ cup (50g) mozzarella cheese, shredded
  • 1 tablespoon ranch seasoning packet (optional)
  • ¼ cup blue cheese crumbles (optional)

Instructions

  1. Shred the cooked chicken and ensure it is thoroughly drained and patted dry to remove excess moisture.
  2. In a medium saucepan over medium-low heat, combine the softened cream cheese and ranch dressing. Stir constantly with a wooden spoon until the mixture is completely smooth and creamy, about 3-4 minutes.
  3. Pour in the buffalo sauce and stir vigorously until fully incorporated and the mixture turns a vibrant orange-pink color.
  4. Add the shredded chicken to the saucepan and stir gently to coat every piece. Let it simmer for one minute to meld flavors.
  5. Remove the pan from the heat and stir in the shredded cheddar and mozzarella cheese. Use residual heat to melt the cheese; if necessary, return to low heat for 30 seconds, stirring constantly.
  6. Transfer the dip to a serving bowl or slow cooker. Garnish with green onions or blue cheese if desired, and serve immediately with sturdy tortilla chips or vegetable sticks.

Notes

Ensure cream cheese is softened to prevent lumps. Drain chicken thoroughly to avoid a watery dip. If the dip is too thick, add a splash of milk or extra ranch. If too thin, let it cool slightly as cream cheese thickens upon cooling.
