  • 8 tablespoons unsalted butter (divided: 4 for soup base, 4 for sage topping)
  • 15–20 fresh sage leaves

Instructions

  1. Peel the butternut squash, remove seeds, and cube into 1-inch pieces.
  2. Heat olive oil in a large pot over medium heat. Add diced onion and a pinch of salt; cook until soft and translucent (about 5 minutes).
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Add cubed squash to the pot and stir to coat. Pour in broth to just cover the squash.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes until squash is tender.
  6. Remove from heat and blend soup until completely smooth using an immersion blender or standard blender.
  7. Stir in heavy cream and season with salt and pepper to taste.
  8. In a small skillet, melt 4 tablespoons of butter over medium heat until it turns golden brown and smells nutty (3-5 minutes).
  9. Add sage leaves to the brown butter and fry for 30 seconds until crispy.
