  • 1 (28-ounce) can red enchilada sauce
  • 1 (15-ounce) can fire-roasted diced tomatoes (undrained)
  • 1 (15-ounce) can black beans (rinsed and drained)
  • 1 (15-ounce) can corn (drained)
  • 1 medium yellow onion, diced (about 1.5 cups)
  • 4 cloves garlic, minced
  • 1 (4-ounce) can diced green chiles
  • 4 ounces cream cheese, softened and cubed
  • 1/2 cup low-sodium chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sour cream
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest

Instructions

  1. Prep your ingredients (10 minutes): Dice your onion and mince your garlic. Cube the cream cheese and leave it on the counter to soften while you prep everything else. Rinse and drain your black beans and corn. Measure out your spices into a small bowl so you can add them all at once.
  2. Layer everything in the crockpot (5 minutes): Place the chicken breasts in the bottom of your slow cooker. Add the diced onion, minced garlic, black beans, corn, and diced green chiles on top. Pour the enchilada sauce, fire-roasted tomatoes (with their juices), and chicken broth over everything. Sprinkle the spice blend — chili powder, cumin, smoked paprika, oregano, salt, and pepper — evenly across the top.
  3. Cook low and slow (6-7 hours on low OR 3-4 hours on high): I strongly recommend cooking on low if you have the time. The longer, gentler cooking makes the chicken incredibly tender and lets the flavors really meld together.
  4. Shred the chicken (5 minutes): About 30 minutes before serving, use tongs to remove the chicken breasts to a cutting board. Let them rest for a minute or two, then shred with two forks. It should fall apart easily — that’s how you know it’s done right. Return the shredded chicken to the pot.
  5. Add the cream cheese and blend (5 minutes): Drop in the softened, cubed cream cheese. Let it sit for a minute to start melting, then use your immersion blender to blend about half the soup. You want some texture left — whole beans, corn kernels, chunks of chicken. If you’re using a regular blender, carefully transfer about 2 cups of the soup (mostly liquid, not too many solids) to the blender, blend until smooth, and stir it back in. Stir well to incorporate the cream cheese throughout.
  6. Make the lime crema (2 minutes): While the soup finishes cooking, mix the sour cream, fresh lime juice, lime zest, and a pinch of salt in a small bowl. Stir until smooth and combined. Taste and add more lime if you want it tangier. Set aside in the fridge until you’re ready to serve.
  7. Let it rest (10 minutes): Turn off the slow cooker and let the soup sit for about 10 minutes. This allows the flavors to settle and the soup to thicken slightly. It also cools it down to a safe eating temperature — nobody wants a burned mouth.

Notes

The soup will look a little thin before you blend it. Don’t panic! Blending that portion of the soup with the cream cheese creates that velvety texture you’re after. If it’s still too thin after blending, let it cook on high with the lid off for another 15-20 minutes to reduce slightly. For best results, use room temperature cream cheese and cube it small to avoid lumps. The lime crema should be made fresh each time for the best flavor.
