This creamy cucumber dill salad is a refreshing, make-ahead side dish that gets better as it sits. With crisp cucumbers, tangy sour cream dressing, and fresh dill, it’s perfect for potlucks, barbecues, or weeknight dinners.

  • 1 small red onion
  • 1 cup sour cream
  • 1/4 cup mayonnaise
  • 3 tablespoons fresh dill, chopped
  • 2 tablespoons white vinegar
  • 1 teaspoon granulated sugar
  • 1 teaspoon kosher salt (plus more for salting cucumbers)
  • 1/2 teaspoon freshly ground black pepper
  • Optional: extra dill sprigs or paprika for garnish

Instructions

  1. Wash and dry the cucumbers. If using English cucumbers, leave the skin on. Slice into thin rounds, about 1/8-inch thick.
  2. Place cucumber slices in a colander set over a bowl. Sprinkle with 1 teaspoon kosher salt and toss gently. Let sit for 30 minutes to draw out excess moisture.
  3. While cucumbers rest, thinly slice the red onion. If desired, soak slices in ice water for 10 minutes to mellow sharpness, then drain and pat dry.
  4. In a small bowl, whisk together sour cream, mayonnaise, white vinegar, sugar, and black pepper until smooth.
  5. After 30 minutes, rinse cucumber slices under cold water to remove excess salt. Spread on a clean kitchen towel or paper towels and pat very dry.
  6. In a large mixing bowl, combine dried cucumber slices, sliced red onion, and chopped fresh dill. Pour dressing over top and fold gently with a rubber spatula until evenly coated.
  7. Cover bowl with plastic wrap or transfer to a storage container. Refrigerate for at least 1 hour before serving. For best flavor, let rest overnight.
  8. Before serving, stir gently. Taste and adjust seasoning if needed. Garnish with extra dill or a dusting of paprika if desired.

Notes

Do not skip salting the cucumbers—it prevents a watery salad. For best flavor, make a day ahead. Use fresh dill for brightest taste. Store in airtight container in fridge for up to 3 days. Do not freeze.
