  • 2 large English cucumbers (or 3 medium), sliced into thin rounds
  • 1 cup plain Greek yogurt (full-fat or 2%)
  • 1/4 cup fresh dill, finely chopped
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 1 small garlic clove, minced
  • 1 teaspoon kosher salt (plus more for salting cucumbers)
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup red onion, thinly sliced (optional)
  • 1 tablespoon white vinegar or apple cider vinegar

Instructions

  1. Wash and slice the cucumbers into thin rounds, about 1/8-inch thick. If using English cucumbers, leave the skin on.
  2. Place the sliced cucumbers in a large bowl and sprinkle with 1 teaspoon of salt. Toss to distribute evenly and let sit for 15-20 minutes. Water will pool at the bottom.
  3. Transfer the salted cucumbers to a colander and let drain for a few minutes. Then spread them on a clean kitchen towel or paper towels and pat dry gently to remove excess moisture.
  4. In a medium bowl, combine Greek yogurt, lemon juice, olive oil, minced garlic, white vinegar, and black pepper. Whisk until smooth and creamy. Adjust seasoning to taste.
  5. Finely chop the fresh dill (including tender stems) and thinly slice the red onion into half-moons. If desired, soak onion slices in cold water for 10 minutes to mellow the bite, then drain and pat dry.
  6. In a large bowl, combine the dried cucumber slices, chopped dill, and sliced red onion. Pour the dressing over the top and toss gently with a rubber spatula until evenly coated.
  7. Cover the bowl and refrigerate for 15-30 minutes before serving to allow flavors to meld. (Optional but recommended.)
  8. Before serving, give the salad a quick stir to redistribute the dressing. Taste and adjust salt or pepper if needed.

Notes

Salting the cucumbers is essential to prevent a watery salad. Use full-fat Greek yogurt for the creamiest dressing. Fresh dill is highly recommended over dried. For best flavor, let the salad rest in the fridge for 15-30 minutes before serving. Store leftovers in an airtight container in the refrigerator for up to 2 days. Do not freeze.
