  • 8 ounces (225g) pasta (fettuccine, linguine, or spaghetti)
  • 3 tablespoons unsalted butter, softened
  • 4 cloves garlic, finely minced
  • 1 cup (240ml) heavy cream
  • 1 cup (100g) freshly grated parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped, for garnish
  • Optional: pinch of red pepper flakes

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 ounces (225g) of pasta and cook according to package instructions until al dente (about 8-10 minutes). Reserve ½ cup (120ml) of pasta water before draining.
  2. While pasta cooks, melt 3 tablespoons unsalted butter in a large skillet over medium heat. Add 4 cloves finely minced garlic and cook gently, stirring often, for 1-2 minutes until soft and fragrant but not browned.
  3. Lower heat to medium-low and pour in 1 cup (240ml) heavy cream. Stir and let simmer gently for 3-4 minutes until sauce thickens slightly without boiling hard.
  4. Gradually stir in 1 cup (100g) freshly grated parmesan cheese until sauce is smooth and velvety. Add reserved pasta water if sauce is too thick.
  5. Season sauce with salt, freshly ground black pepper, and optional red pepper flakes. Stir and remove from heat.
  6. Toss drained pasta into the skillet with sauce, coating evenly. Add more pasta water if needed to reach desired creaminess.
  7. Garnish with chopped fresh parsley and serve immediately with extra parmesan if desired.

Notes

Cook garlic gently in butter to avoid bitterness. Reserve pasta water to adjust sauce consistency. Use freshly grated parmesan for best melt and flavor. Simmer cream gently to prevent splitting. Toss pasta immediately after draining to keep sauce smooth.
