A simple yet elegant summer salad featuring smoky grilled peaches, creamy burrata, peppery arugula, and a sweet honey drizzle. Ready in under 20 minutes, it’s perfect for weeknight dinners or entertaining.

  • 4 medium peaches, ripe but firm
  • 8 ounces burrata cheese (1 large ball or 2 small)
  • 3 tablespoons honey, divided (2 for glaze, 1 for drizzling)
  • 4 cups loosely packed arugula
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar (optional)
  • Flaky sea salt (e.g., Maldon), for finishing
  • Freshly cracked black pepper, to taste
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. Preheat your grill or grill pan to medium-high heat (about 400°F for gas, or until coals are covered with white ash for charcoal).
  2. Wash and dry the peaches. Cut each in half along the natural seam, twist to separate, and remove the pit. Leave the skin on.
  3. In a small bowl, whisk together 2 tablespoons honey and 2 tablespoons olive oil until combined.
  4. Brush the cut side of each peach half generously with the honey-olive oil mixture. Reserve any leftover glaze.
  5. Place the peaches cut-side down on the hot grill. Cook undisturbed for 3–4 minutes until grill marks appear and edges begin to char. Flip and cook for another 2–3 minutes on the skin side. Peaches should be tender but still hold their shape.
  6. Transfer grilled peaches to a plate and let cool for about 5 minutes.
  7. Remove burrata from the refrigerator and pat dry. Tear into pieces or leave whole.
  8. On a large serving platter, spread arugula in an even layer. Arrange grilled peach halves on top, cut-side up. Place burrata pieces around the peaches.
  9. Drizzle remaining honey-olive oil glaze over everything. If using balsamic vinegar, drizzle that as well. Sprinkle generously with flaky sea salt and black pepper. Drizzle the remaining 1 tablespoon honey over the top.
  10. Garnish with torn basil leaves if desired. Serve immediately while peaches are warm and burrata is cool and creamy.

Notes

Don’t skip the oil in the honey glaze—it prevents burning. Use room temperature burrata for best creaminess. Assemble just before serving; the salad does not store well. For a full meal, add grilled chicken, shrimp, or crispy prosciutto.
