Creamy Marry Me Chicken Pasta with Sun-Dried Tomato Sauce

A comforting and creamy chicken pasta dish featuring a rich sun-dried tomato sauce, perfect for quick weeknight dinners or cozy get-togethers.

  • 1 pound boneless, skinless chicken breasts, thinly sliced or pounded to even thickness
  • ½ cup sun-dried tomatoes, preferably packed in oil, drained and chopped
  • 1 cup heavy cream
  • ½ cup low sodium chicken broth
  • 3 cloves garlic, minced
  • ½ cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 8 ounces fettuccine or penne pasta
  • A handful fresh basil, chopped
  • Salt and pepper, to taste
  • Red pepper flakes, optional

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 ounces of pasta and cook according to package instructions (10-12 minutes) until al dente. Drain and set aside, reserving about ½ cup of pasta water.
  2. Season chicken breasts with salt and pepper. Heat 2 tablespoons olive oil over medium-high heat in a skillet.
  3. Add chicken to the pan in a single layer. Cook 4-5 minutes per side until golden brown and cooked through (internal temperature 165°F). Remove chicken and keep warm.
  4. Reduce heat to medium. Add minced garlic and sauté for about 30 seconds until fragrant, careful not to burn.
  5. Stir in chopped sun-dried tomatoes and cook for 1-2 minutes to release flavor.
  6. Pour in chicken broth, scraping the pan to lift browned bits. Simmer for 2-3 minutes to reduce slightly.
  7. Add heavy cream and grated Parmesan cheese. Simmer gently for 5-7 minutes until sauce thickens, stirring often. Add reserved pasta water if sauce is too thick.
  8. Slice cooked chicken into strips. Add chicken back to the sauce and stir to coat.
  9. Add drained pasta to the sauce and toss to combine thoroughly.
  10. Stir in chopped fresh basil and season with additional salt, pepper, and optional red pepper flakes.
  11. Serve immediately, garnished with extra Parmesan and basil leaves if desired.

Notes

If sauce separates, reduce heat and add a splash of reserved pasta water to bring it back together. Use low heat when adding cream and cheese to prevent curdling. Drain sun-dried tomatoes to avoid oily sauce. Adding reserved pasta water helps sauce cling to noodles.
