A creamy, mayo-free egg salad made with Greek yogurt and a secret ingredient (sweet pickle relish) that’s perfect for lunch boxes. It’s silky, not slimy, and kid-approved.

  • 1/3 cup plain Greek yogurt (full-fat or 2%)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh lemon juice
  • 1/4 teaspoon fine sea salt
  • 1/8 teaspoon freshly ground black pepper
  • 1 small stalk celery, finely diced
  • 1 tablespoon fresh chives, chopped (optional, or substitute green onions)
  • 1 tablespoon sweet pickle relish

Instructions

  1. Place 8 eggs in a single layer in a medium saucepan. Cover with cold water by about an inch. Bring to a boil over high heat, then cover, turn off heat, and let sit for exactly 10 minutes.
  2. While eggs sit, prepare an ice bath (bowl of ice and cold water). After 10 minutes, transfer eggs to ice bath using a slotted spoon. Let chill for at least 5 minutes.
  3. Peel eggs: gently tap each egg on counter to crack shell, roll between palms, and peel starting from the wider end. Rinse under cold water if needed.
  4. Place peeled eggs in a mixing bowl. Mash with a potato masher or fork to desired consistency (medium mash recommended for picky eaters).
  5. Add Greek yogurt, Dijon mustard, and lemon juice to mashed eggs. Stir gently with a spatula until combined. Mixture should be creamy but not soupy; adjust with extra yogurt or egg white if needed.
  6. Fold in finely diced celery and sweet pickle relish. Stir gently to distribute evenly.
  7. Add salt, pepper, and fresh chives. Taste and adjust seasoning as needed.
  8. Cover bowl and refrigerate for at least 30 minutes before serving (or overnight for best flavor). Serve cold or at room temperature.

Notes

For easier peeling, use eggs that are at least a week old. Add a teaspoon of baking soda to boiling water if eggs are very fresh. The egg salad improves after a few hours in the fridge. Do not freeze. For dairy-free, substitute with thick plain coconut yogurt or cashew cream.
