Creamy One-Pot Cheeseburger Potato Soup

A quick and easy one-pot soup that combines the comforting flavors of a cheeseburger with creamy potato soup. Perfect for busy weeknights, this recipe uses simple ingredients and comes together in about 40 minutes.

  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 cups whole milk
  • 2 pounds Yukon Gold potatoes, peeled and cubed (about 4 medium)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon yellow mustard
  • 2 cups sharp cheddar cheese, shredded
  • 4 ounces cream cheese, softened
  • Cooked, crumbled bacon (for topping, optional)
  • Chopped green onions (for topping, optional)
  • Extra shredded cheddar (for topping, optional)
  • Pickle slices (for topping, optional)

Instructions

  1. Brown the beef: Place a Dutch oven over medium-high heat. Add ground beef and cook, breaking it up, until browned and cooked through (6-8 minutes). Leave about 1 tablespoon of fat in the pot.
  2. Sauté aromatics: Reduce heat to medium. Add diced onion and cook 3-4 minutes until softened. Add minced garlic and cook 30 seconds until fragrant.
  3. Add seasonings and liquids: Stir in tomato paste, Worcestershire sauce, yellow mustard, salt, pepper, smoked paprika, and garlic powder. Cook 1 minute. Pour in chicken broth and milk, scraping up browned bits.
  4. Add potatoes: Stir in cubed potatoes. Bring to a gentle boil, then reduce heat to low. Cover and simmer 15-20 minutes until potatoes are fork-tender.
  5. Incorporate cheeses: Remove pot from heat. Add softened cream cheese and shredded cheddar. Stir until completely melted and smooth.
  6. Blend for creaminess (optional): Use an immersion blender to give 3-4 quick pulses, breaking down about a third of the potatoes. Alternatively, transfer 2 cups of soup to a blender, blend until smooth, and stir back into the pot.
  7. Taste and adjust: Add more salt, pepper, or hot sauce if desired.
  8. Serve immediately: Ladle into bowls and top with crumbled bacon, green onions, extra cheddar, and pickle slices if desired.

Notes

For best results, shred cheese from a block to avoid graininess. If soup thickens too much after sitting, stir in a splash of warm milk or broth. The soup can be frozen for up to 3 months.
