  • 1/2 cup (120ml) milk (any kind)
  • 1/4 cup (60g) plain Greek yogurt
  • 2 tablespoons (32g) creamy peanut butter
  • 1 tablespoon (15ml) honey or maple syrup
  • 1 tablespoon (12g) chia seeds
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1 scoop (about 30g) vanilla or unflavored protein powder (optional)
  • For topping: sliced banana, chopped peanuts or almonds, extra peanut butter drizzle, dark chocolate chips, cinnamon (optional)

Instructions

  1. Combine the dry ingredients: In a mason jar or airtight container, add rolled oats, chia seeds, and a pinch of salt. If using protein powder, add it now. Stir to distribute evenly.
  2. Add the wet ingredients: Pour in milk, Greek yogurt, creamy peanut butter, honey or maple syrup, and vanilla extract.
  3. Mix thoroughly: Stir vigorously with a whisk or fork until the peanut butter is fully incorporated and the mixture is smooth and creamy. Scrape the bottom and corners of the jar.
  4. Seal and refrigerate: Put the lid on tightly and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  5. The morning of: Remove from fridge, stir well. If too thick, add a splash of milk (1-2 tablespoons) and stir to desired consistency.
  6. Add toppings: Slice banana, sprinkle with nuts or chocolate chips, drizzle with extra peanut butter, or add cinnamon.
  7. Enjoy immediately or pack to go. Store in fridge for up to 3 days.

Notes

For best texture, use rolled oats (not instant or steel-cut). If peanut butter is stiff, microwave for 10-15 seconds to soften. Do not overdo chia seeds (1 tablespoon is perfect). Protein powder can affect sweetness; adjust honey/maple syrup accordingly. Oats taste even better on day 2. To reheat, microwave for 45-60 seconds, stirring halfway.
