These creamy pumpkin spice overnight oats with pecans are the perfect fall breakfast. Made with simple ingredients and prepared the night before, they deliver a warm, spiced, and crunchy start to your day.

Ingredients

  • 1 cup (90g) rolled oats
  • ½ cup (120g) pumpkin puree
  • 1 cup (240ml) milk of choice
  • ¼ cup (60g) plain Greek yogurt
  • 2 tablespoons (30ml) maple syrup
  • 1 tablespoon (12g) chia seeds
  • 1½ teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • ¼ cup (30g) chopped pecans
  • Optional toppings: extra pecans, maple syrup, yogurt, cinnamon

Instructions

  1. Toast the pecans (optional but worth it). In a dry skillet over medium heat, toast chopped pecans for 3-4 minutes until fragrant. Let cool completely.
  2. Mix the wet ingredients. In a small bowl or jar, combine pumpkin puree, milk, Greek yogurt, maple syrup, and vanilla extract. Whisk until smooth.
  3. Add the dry ingredients. Stir in rolled oats, chia seeds, pumpkin pie spice, and a pinch of salt. Mix well.
  4. Layer in the pecans. Divide oat mixture between two jars. Sprinkle toasted pecans on top or stir half in and reserve the rest for garnish.
  5. Seal and refrigerate. Put lids on jars and refrigerate for at least 6 hours, preferably overnight.
  6. Give it a stir before serving. In the morning, stir the oats. If too thick, add a splash of milk. If too thin, let sit another hour.
  7. Add toppings and enjoy. Top with extra pecans, maple syrup, yogurt, or cinnamon. Serve cold or microwave for 45-60 seconds for warm oats.

Notes

For best texture, use rolled oats, not instant or steel-cut. Store pecans separately if meal prepping to keep them crunchy. The flavors improve after a day or two in the fridge.
