A creamy, spicy, and tangy buffalo chicken dip made effortlessly in a slow cooker with a signature blue cheese swirl. Perfect for game day, parties, or cozy nights in.

Ingredients

Scale
  • 3 cups shredded cooked chicken (about 10.5 oz or 300 g)
  • 8 oz (225 g) cream cheese, softened
  • 1/2 cup (120 ml) buffalo wing sauce (e.g., Frank’s RedHot)
  • 1/2 cup (120 ml) ranch dressing
  • 1/2 cup (75 g) blue cheese crumbles
  • 1 cup (120 g) shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper to taste
  • Optional: splash of hot sauce or pinch of smoked paprika

Instructions

  1. Prepare the shredded chicken: If using raw chicken breasts, poach in simmering water for about 15 minutes until cooked through, then shred with two forks. Rotisserie chicken is a great shortcut.
  2. In a mixing bowl, combine softened cream cheese, buffalo wing sauce, ranch dressing, garlic powder, onion powder, salt, and pepper. Mix until creamy and smooth.
  3. Stir in shredded chicken and shredded cheddar cheese until well coated.
  4. Transfer the mixture to the slow cooker insert and smooth the top with a spatula.
  5. Scatter blue cheese crumbles evenly over the top and gently swirl into the dip using a butter knife or skewer, creating a marbled effect without fully mixing.
  6. Cover and cook on low for 2 hours. Stir gently after the first hour.
  7. Taste and adjust seasoning if needed. If too thick, stir in a tablespoon of milk or ranch dressing.
  8. Switch slow cooker to warm setting to keep dip ready for serving.

Notes

Soften cream cheese before mixing to avoid lumps. Stir halfway through cooking to prevent cheese from sticking. Use rotisserie chicken for convenience and flavor. Blue cheese swirl adds bold flavor pockets without overwhelming. Can prep ahead by mixing all but blue cheese and refrigerating overnight.
