  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil (optional, for browning chicken)

Instructions

  1. Pat 2 pounds of boneless, skinless chicken dry with paper towels.
  2. Optional: Heat 1 tablespoon olive oil in a skillet over medium-high heat. Brown chicken breasts or thighs for 2-3 minutes per side until golden.
  3. In a bowl, combine 1/4 cup honey, 1/4 cup low-sodium soy sauce, 1/2 cup chicken broth, 4 minced garlic cloves, 1 teaspoon onion powder, 1/2 teaspoon paprika, and 1/4 teaspoon black pepper. Stir well until blended.
  4. Place the chicken in the slow cooker. Pour the honey garlic sauce evenly over the chicken.
  5. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours until chicken is tender and shreds easily.
  6. Remove chicken and shred with two forks, then return shredded chicken to the sauce.
  7. Stir in 4 ounces softened cream cheese until fully melted and combined.
  8. Cook uncovered on LOW for another 15-20 minutes to thicken the sauce, stirring occasionally.
  9. Serve warm over rice, mashed potatoes, or your favorite grain.

Notes

Browning the chicken before slow cooking adds extra flavor but is optional. Use tamari instead of soy sauce for gluten-free. If sauce is too thin, thicken with cornstarch slurry. Cream cheese can be substituted with Greek yogurt or dairy-free alternatives. Fresh herbs can be added for variation.
