A comforting, velvety white chicken chili made in a slow cooker with simple pantry ingredients. Blending a portion of the beans creates a rich, creamy base without the need for heavy reduction, resulting in a dish that is perfect for busy weeknights and meal prep.

  • 2 boneless, skinless chicken breasts or thighs
  • 2 cans (15 oz each) white beans (Cannellini or Great Northern), rinsed and drained
  • 1 medium white onion, diced
  • 3–4 cloves garlic, minced
  • 1 can (4 oz) diced green chiles
  • 2 tablespoons ground cumin
  • 1–2 tablespoons chili powder
  • 2 dried bay leaves
  • 64 ounces (2 cartons) low-sodium chicken broth
  • 1 cup heavy cream or half-and-half
  • 1–2 cups shredded Monterey Jack or Pepper Jack cheese
  • Fresh cilantro, chopped, for garnish
  • Salt and black pepper to taste

Instructions

  1. Dice the white onion and mince the garlic.
  2. Add the onions, garlic, green chiles, drained white beans, cumin, and chili powder to the slow cooker. Stir to coat ingredients in spices.
  3. Place the chicken on top of the bean mixture. Pour in the chicken broth, ensuring the chicken is mostly submerged. Add the bay leaves.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken shreds easily with a fork.
  5. Remove the chicken from the pot and discard the bay leaves. Shred the chicken into bite-sized pieces using two forks.
  6. Remove about two cups of the bean mixture and broth from the pot. Blend until smooth using an immersion blender or regular blender, then pour back into the pot to create a creamy base.
  7. Stir the shredded chicken back into the pot. Add the heavy cream and stir well. Cook on low for another 15-30 minutes to meld flavors.
  8. Stir in the shredded cheese until melted. Taste and adjust seasoning with salt and pepper as needed.
  9. Serve hot, topped with fresh cilantro and extra cheese if desired.

Notes

For a thicker chili, blend more beans or mash some directly in the pot. If the chili is too thin, cook uncovered for the last hour. For a lighter option, use Greek yogurt added off the heat. The flavors improve after sitting overnight in the refrigerator.
