  • 4 garlic cloves, minced
  • 1/3 cup sun-dried tomatoes, chopped (oil-packed or rehydrated dry-packed)
  • 2 cups fresh spinach leaves
  • 1 cup heavy cream (full-fat)
  • 1/2 cup chicken broth
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme blend)
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup white wine (optional)

Instructions

  1. Pat chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and dried Italian herbs. Let rest for 5 minutes.
  2. Heat a large skillet over medium-high heat. Add olive oil and butter. Let butter melt and foam without browning.
  3. Add chicken breasts to the skillet. Cook 4-5 minutes per side until golden brown and cooked through (internal temperature 165°F). Remove chicken and keep warm.
  4. Reduce heat to medium. Add minced garlic to skillet and stir for about 30 seconds until fragrant, avoiding burning.
  5. Pour in white wine (if using), scraping browned bits from the pan. Simmer for 2 minutes until slightly reduced.
  6. Stir in sun-dried tomatoes and fresh spinach. Cook until spinach wilts, about 2-3 minutes.
  7. Add heavy cream and chicken broth. Stir and bring to a gentle simmer. Let sauce thicken for 4-5 minutes, stirring occasionally.
  8. Stir in grated Parmesan cheese. Adjust seasoning with salt, pepper, and extra dried herbs if needed.
  9. Return chicken breasts to skillet, nestling them into the sauce. Spoon sauce over chicken and heat together for 2 minutes.
  10. Serve hot, garnished with fresh parsley if desired.

Notes

Do not overcrowd the pan when searing chicken to ensure a golden crust. Watch garlic closely to prevent burning. If sauce thickens too much, add more broth or cream to loosen. White wine is optional but recommended for brightness. For dairy-free, substitute heavy cream with coconut cream and omit Parmesan or use dairy-free cheese.
