Instructions

  1. Pat the chicken thighs dry with paper towels to remove excess moisture.
  2. Season both sides with salt, pepper, garlic powder, paprika, and dried oregano. Let sit while preparing the coating.
  3. In a medium bowl, combine panko breadcrumbs, grated parmesan, and minced fresh garlic.
  4. Drizzle in 2 tablespoons olive oil and mix until crumbs are evenly coated and slightly clumpy.
  5. Lightly brush chicken thighs with about 1 tablespoon olive oil on both sides.
