A quick and easy party snack featuring spicy jalapeños filled with creamy cheese, wrapped in crispy bacon, and served with a cool ranch dip.

  • 10 medium fresh jalapeños
  • 8 oz (225g) full-fat softened cream cheese
  • 1/2 cup (60g) shredded sharp cheddar cheese
  • 10 thin-cut bacon strips
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste
  • Ranch dressing for dipping

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wearing gloves, slice each jalapeño in half lengthwise and carefully remove the seeds and membranes according to your heat preference. Set aside.
  3. In a mixing bowl, combine softened cream cheese, shredded sharp cheddar, garlic powder, onion powder, salt, and pepper. Mix until smooth and creamy.
  4. Fill each jalapeño half generously with the cheese mixture, mounding it slightly above the edges.
  5. Cut bacon strips in half (about 4 inches each). Wrap each filled jalapeño half with a bacon piece, securing the end underneath if needed.
  6. Place the poppers seam-side down on a rimmed baking sheet lined with parchment paper or a silicone mat.
  7. Bake for 20-25 minutes until bacon is crisp and golden and cheese is bubbling. Optionally broil for 1-2 minutes for extra crispiness, watching closely to avoid burning.
  8. Let poppers rest for 5 minutes before serving.
  9. Serve warm with chilled ranch dressing for dipping.

Notes

Use thin-cut bacon for best crispiness. Wearing gloves when handling jalapeños prevents irritation. Baking on a wire rack inside the baking sheet helps bacon crisp evenly. Flip poppers halfway through baking for even cooking. Broil carefully to avoid burning. Poppers can be prepared ahead and refrigerated up to 24 hours before baking.
