  • ½ cup hot sauce (Frank’s RedHot recommended)
  • ¼ cup unsalted butter, melted (or vegan butter)
  • 1 tablespoon honey (or maple syrup for vegan)
  • ½ teaspoon garlic powder (for sauce)
  • Ranch or blue cheese dressing for dipping (optional)
  • Fresh celery sticks and carrot sticks (optional)
  • Chopped green onions or fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper and place a wire cooling rack on top if you have one.
  2. Wash the cauliflower and cut it into bite-sized florets (about 1 to 1.5 inches wide). Pat them dry thoroughly with a clean kitchen towel or paper towels.
  3. In a large mixing bowl, whisk together 1 cup all-purpose flour, 1 teaspoon garlic powder, 1 teaspoon onion powder, ½ teaspoon smoked paprika, ½ teaspoon salt, ¼ teaspoon black pepper, and ¼ teaspoon cayenne pepper (if using). Add ½ cup milk and ½ cup water, then whisk until smooth. The batter should be thick enough to coat the back of a spoon but still pourable.
  4. Add the dried cauliflower florets to the bowl with the batter. Use a spatula or your hands to gently toss until every floret is evenly coated. Let them sit in the batter for about 2-3 minutes.
  5. Using tongs or your fingers, lift each battered floret out of the bowl, letting any excess batter drip off. Place them on the prepared wire rack or directly on the parchment-lined baking sheet, making sure they are not touching.
  6. Bake for 20 minutes. At the 10-minute mark, flip each floret using tongs so they brown evenly on all sides.
  7. While they bake, make the buffalo sauce: In a small saucepan over low heat, combine ½ cup hot sauce, ¼ cup melted unsalted butter, 1 tablespoon honey, and ½ teaspoon garlic powder. Whisk until smooth and combined. Keep warm.
  8. After the initial 20 minutes, remove the baking sheet from the oven. Using a pastry brush or a spoon, generously brush each floret with the buffalo sauce. Return the sheet to the oven and bake for another 10-12 minutes, until the sauce has caramelized slightly and the edges look dark and crispy.
  9. Optional: For extra crunch, brush on another thin layer of sauce and bake for 5 more minutes.
  10. Remove from the oven and let the cauliflower bites rest on the baking sheet for 2-3 minutes.
  11. Transfer the baked florets to a clean bowl. Pour any remaining buffalo sauce over the top and gently toss to coat. Serve immediately with ranch or blue cheese dressing, celery sticks, and a sprinkle of chopped green onions.

Notes

For best texture, dry cauliflower thoroughly before battering. Use a wire rack for extra crispiness. If making ahead, bake without sauce, then reheat and sauce before serving. Air fryer version: 400°F for 10-12 minutes, then sauce and air fry 3-4 minutes more.
