These crispy crockpot buffalo chicken sliders are an easy, 5-ingredient dinner perfect for game day. Tender shredded chicken tossed in spicy buffalo sauce is served on butter-toasted Hawaiian sweet rolls with creamy blue cheese dressing.

  • 2 pounds boneless, skinless chicken thighs (or breasts)
  • 1 cup buffalo sauce (e.g., Frank’s RedHot Original)
  • 2 tablespoons unsalted butter (for slow cooker)
  • 1 teaspoon garlic powder
  • 12 Hawaiian sweet rolls or slider buns
  • 4 tablespoons unsalted butter (melted, for brushing buns)
  • 1/2 cup blue cheese dressing
  • 1 cup shredded Cheddar or Monterey Jack cheese (optional)

Instructions

  1. Place chicken in the bottom of a slow cooker. If using breasts, keep in a single layer or stack evenly.
  2. Pour buffalo sauce and 2 tablespoons melted butter over the chicken. Sprinkle with garlic powder and toss to coat.
  3. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until chicken reaches 165°F and shreds easily.
  4. Transfer chicken to a large bowl. Discard excess liquid or reserve some for sauciness. Shred chicken with two forks.
  5. Slice slider buns in half horizontally. Brush cut sides generously with 4 tablespoons melted butter.
  6. Place buns butter-side up on a baking sheet. Broil for 1-2 minutes until golden brown, watching closely to prevent burning.
  7. Place shredded buffalo chicken onto the bottom half of each toasted bun. Top with blue cheese dressing and shredded cheese if using.
  8. Return assembled sliders to the baking sheet and broil for another 1-2 minutes until cheese is melted and bubbly. Serve immediately.

Notes

For best texture, toast the buns just before serving to prevent sogginess. Chicken thighs stay juicier than breasts in the slow cooker. If making ahead, shred chicken and keep warm on ‘warm’ setting; toast buns right before eating. For a milder heat, mix buffalo sauce with tomato sauce or ketchup.
