Instructions

  1. Cut the avocados in half, remove the pits, and scoop the flesh into a medium bowl. Add the lemon juice and a pinch of salt. Using a fork, gently mash to a slightly chunky consistency. Set aside. (About 5 minutes)
  2. Slice the everything bagels in half horizontally. Spread a thin layer of butter on each cut side if desired. Toast in a toaster or under the oven broiler until golden and crispy—about 2-3 minutes per side. Watch carefully to avoid burning. (5 minutes)
  3. Heat 1 tablespoon of butter or olive oil in a non-stick skillet over medium-low heat. Crack the eggs carefully into the pan. Cook slowly for 3-4 minutes until whites are set but yolks still jiggle when you gently shake the pan. For extra precision, cover the pan loosely with a lid to help whites set without flipping.
