  • 1 cup white chocolate chips (e.g., Guittard or Ghirardelli)
  • A few drops food coloring (optional, for white chocolate drizzle)
  • Pinch of sea salt

Instructions

  1. Line a 9×13 inch baking dish with parchment paper, leaving some overhang for easy removal. Set aside.
  2. In a large saucepan over low heat, melt 3 tablespoons (42g) of unsalted butter until fully melted, about 2-3 minutes.
  3. Add 4 cups (about 120g) of mini marshmallows and stir continuously until completely melted and smooth, about 5 minutes.
  4. Remove from heat and stir in 1 teaspoon vanilla extract and a pinch of sea salt.
  5. Quickly add 6 cups (180g) of rice cereal with marshmallow clusters to the melted mixture. Gently fold with a spatula or spoon until all cereal pieces are evenly coated. Work fast before the mixture sets.
  6. Transfer the sticky mixture into the prepared pan. Using a buttered spatula or wax paper, press the mixture evenly into the pan without squishing it too hard to keep it crispy.
  7. Let it cool at room temperature for about 30 minutes or until firm.
  8. Place 1 cup (175g) of white chocolate chips in a microwave-safe bowl. Microwave in 20-second intervals, stirring in between, until smooth and fully melted. If desired, stir in a few drops of food coloring for a festive look.
  9. Using a fork or piping bag, drizzle the melted white chocolate over the cooled Rice Krispie treats in fun, random patterns.
  10. Allow the white chocolate drizzle to set completely, about 15 minutes at room temperature or 10 minutes in the refrigerator.
  11. Using a sharp knife, cut into squares or rectangles.
