  • 1 1/2 cups Sharp Cheddar Cheese, freshly grated
  • 1 teaspoon Dijon Mustard
  • 1/2 teaspoon Garlic Powder
  • 1 teaspoon Worcestershire Sauce
  • Pinch of Cayenne Pepper

Instructions

  1. In a small bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until foamy.
  2. In a large mixing bowl, combine flour and salt. Add melted butter and activated yeast mixture. Mix until a shaggy dough forms.
  3. Knead dough on a floured surface for 8 minutes until smooth and elastic.
  4. Place dough in an oiled bowl, cover, and let rise in a warm place for 1 hour or until doubled.
  5. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  6. In a large pot, bring 8 cups of water and baking soda to a boil.
  7. Punch down risen dough. Roll out to 1/2 inch thickness and cut into 1-inch squares or balls.
  8. Working in batches, boil pretzel bites in the baking soda water for 30 seconds. Remove with a slotted spoon and place on baking sheet. Sprinkle immediately with coarse sea salt.
  9. Bake for 12-15 minutes until deep golden brown.
  10. While pretzels bake, melt butter in a saucepan. Whisk in flour and cook for 1 minute. Slowly whisk in beer and simmer until thickened.
  11. Remove sauce from heat. Stir in cheddar cheese, mustard, garlic powder, Worcestershire sauce, and cayenne until smooth.
  12. Serve warm pretzel bites with the hot beer cheese sauce.
