  • 1.5 lbs (680g) boneless, skinless chicken breasts
  • 4 tablespoons unsalted butter, cut into pieces
  • 1 medium yellow onion, diced
  • 3 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 cup frozen peas
  • 1 cup frozen corn (optional)
  • 2 medium Russet potatoes, peeled and diced into ½-inch cubes
  • 4 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • ¼ cup all-purpose flour
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • 2 bay leaves
  • Salt and black pepper to taste
  • 1 package frozen puff pastry sheets, thawed
  • 1 egg, beaten
  • Flaky sea salt for sprinkling
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep your vegetables. Dice the onion, carrots, and celery into roughly equal-sized pieces — about ½-inch cubes. Peel and dice the potatoes the same size. Mince the garlic.
  2. Layer everything in the crockpot. Place the chicken breasts at the bottom of the slow cooker. Scatter the diced onion, carrots, celery, and potatoes around and on top of the chicken. Add the minced garlic, dried thyme, dried rosemary, and bay leaves. Dot the butter pieces over the top. Season generously with salt and pepper — about 1 teaspoon of salt and ½ teaspoon of pepper to start.
  3. Add the liquid. Pour the chicken broth over everything. Don’t stir — just let the liquid settle around the ingredients. The chicken should be mostly submerged. If it isn’t, add a little more broth or water until it’s almost covered.
  4. Cook low and slow. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours. You’ll know it’s ready when the chicken shreds easily with a fork and the vegetables are tender.
  5. Shred the chicken. About 30 minutes before serving, carefully remove the chicken breasts from the crockpot and place them on a cutting board. Use two forks to shred the meat. Discard the bay leaves. Return the shredded chicken to the pot.
  6. Make the cream mixture. In a small bowl, whisk together the heavy cream and all-purpose flour until smooth with no lumps. Pour this mixture into the crockpot and stir gently to combine. Add the frozen peas and corn now.
  7. Finish cooking the soup. Cover and cook on HIGH for another 20-30 minutes, or until the soup has thickened slightly and the peas are heated through. Give it a taste and adjust the salt and pepper.
  8. While the soup finishes, make the puff pastry croutons. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Unfold the thawed puff pastry sheet on a lightly floured surface. Cut it into 1-inch squares using a pizza cutter or sharp knife. Transfer the squares to the prepared baking sheet, spacing them about an inch apart. Brush the tops with the beaten egg and sprinkle with flaky sea salt.
  9. Bake the croutons. Bake for 12-15 minutes, or until the pastry squares are puffed up and golden brown. Let them cool on the baking sheet for a few minutes.
  10. Serve immediately. Ladle the soup into bowls and top generously with the puff pastry croutons. Garnish with fresh parsley if desired.

Notes

For best results, use low-sodium broth and adjust salt at the end. The puff pastry croutons are best fresh; add them right before serving to maintain crunch. The soup tastes even better the next day as flavors meld. For a thicker soup, mash some cooked potatoes or add a cornstarch slurry.
