A frosty, cinnamon-kissed apple cider mimosa that tastes like autumn in a glass. This easy recipe uses simple ingredients and takes just five minutes to throw together, perfect for fall gatherings.

  • 1 bottle (750 ml) prosecco or champagne, chilled
  • 2 tablespoons ground cinnamon
  • 2 tablespoons granulated sugar
  • 1 tablespoon honey or agave syrup (optional)
  • Apple slices or cinnamon sticks (for garnish)

Instructions

  1. Prepare the cinnamon sugar rim mixture: In a small shallow dish, combine 2 tablespoons ground cinnamon and 2 tablespoons granulated sugar. Stir with a fork until evenly mixed. If using honey, warm 1 tablespoon slightly (about 10 seconds in the microwave) so it’s runny, and pour it into a separate shallow dish.
  2. Prep the glass rims: Take a champagne flute or wine glass. Lightly dampen the rim by running a paper towel around the edge, or use a small pastry brush dipped in water (or honey, if using). You want it just tacky, not dripping. Then gently dip the rim into the cinnamon sugar mixture, rotating slowly until evenly coated. Tap off any excess. Repeat for all glasses.
  3. Chill everything thoroughly: The cider, prosecco, and even the glasses should be cold. I usually pop the glasses in the fridge for 15 minutes after rimming them to set the coating.
  4. Fill each glass halfway with apple cider: Pour slowly to avoid disturbing the rim. About 1/4 cup (60 ml) per standard flute is the sweet spot.
  5. Top off with prosecco: Fill the rest of the glass with chilled prosecco, pouring gently down the side to preserve the bubbles. Give the glass a very gentle swirl—don’t stir, or you’ll lose the carbonation.
  6. Garnish and serve immediately: Add a thin apple slice or a cinnamon stick to each glass. Serve right away while the rim is crunchy and the bubbles are lively.

Notes

Don’t skip chilling everything beforehand. Warm prosecco with apple cider just tastes flat and sad. Stick everything in the fridge at least an hour before you plan to serve. Also, if you’re making these for a crowd, double the rim mixture—people always want extra. The trick to keeping the cinnamon sugar rim crunchy is to use a barely-damp paper towel to wet the rim, not honey or syrup.
