Instructions

  1. Make the cream cheese spread: In a small bowl, combine softened cream cheese and ranch dressing (or Greek yogurt). Add a tiny pinch of salt and pepper. Mix until smooth and creamy.
  2. Prepare your tortillas: Lay one tortilla flat on your cutting board. If tortillas are stiff, microwave for 10-15 seconds to make pliable.
  3. Spread the base: Using a butter knife or spatula, spread a thin, even layer of the cream cheese mixture all the way to the edges of the tortilla.
  4. Layer the turkey: Arrange turkey slices evenly over the cream cheese, overlapping slightly so there are no gaps.
  5. Add the cheese and veggies: Lay cheddar slices over the turkey or sprinkle shredded cheese evenly. If using spinach or sun-dried tomatoes, scatter them over the cheese and press down gently.
  6. Roll it up tightly: Starting at one edge, roll the tortilla as tightly as possible without tearing. Use fingers to tuck in filling as you go. Place seam-side down.
  7. Wrap and chill: Tightly wrap the rolled tortilla in plastic wrap or parchment paper. Twist ends like a candy wrapper. Refrigerate for at least 30 minutes.
  8. Slice and serve: Unwrap the chilled roll and place on cutting board. Using a sharp knife, slice into 1-inch thick pinwheels using a gentle sawing motion. Arrange in bento box or container.
