  • 1 ½ cups Granulated Sugar
  • 2 teaspoons Baking Powder
  • ½ teaspoon Baking Soda
  • 1 teaspoon Salt
  • ½ cup Unsalted Butter, softened
  • 2 Large Eggs, room temperature
  • 2 teaspoons Vanilla Extract
  • 1 cup Buttermilk
  • ½ cup Rainbow Sprinkles
  • 1 cup Unsalted Butter, softened (for frosting)
  • 4–5 cups Confectioners’ Sugar, sifted (for frosting)
  • 2–3 tablespoons Heavy Cream (for frosting)
  • 1 tablespoon Vanilla Extract (for frosting)
  • ¼ teaspoon Salt (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan and dust with flour.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar on medium-high speed until light and fluffy (3-4 minutes).
  4. Add eggs one at a time, beating well after each addition. Mix in 2 teaspoons vanilla extract. Scrape down bowl sides.
  5. Add half of the dry ingredients to the butter mixture and mix on low. Add buttermilk, mixing until just combined. Add remaining dry ingredients and mix until smooth. Do not overmix.
  6. Gently fold in rainbow sprinkles using a rubber spatula.
  7. Pour batter into prepared pan and spread evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cake cool in pan for 10 minutes, then transfer to a cooling rack to cool completely.
  9. While cake cools, beat 1 cup softened butter until creamy. Gradually add confectioners’ sugar, alternating with heavy cream and 1 tablespoon vanilla. Beat on high for 3 minutes until fluffy.
  10. Spread buttercream over cooled cake. Add extra sprinkles on top if desired. Slice and serve.

Notes

Ensure all ingredients, especially butter and eggs, are at room temperature for best emulsion. Do not overmix the batter once flour is added to avoid a dense cake. Toss sprinkles in a teaspoon of flour before folding them in to prevent sinking. Cool the cake completely before frosting to prevent the buttercream from melting.
