These buttery, chewy blondies are packed with candy corn that melts into soft, jammy pockets of sweetness. Ready in under 30 minutes with simple pantry ingredients, they’re the perfect fall treat for kids and adults alike.

  • 1 cup (200g) light brown sugar, packed
  • ¼ cup (50g) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (120g) all-purpose flour, spooned and leveled
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup (about 180g) candy corn, divided
  • Flaky sea salt, for sprinkling

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides. Alternatively, grease the pan well with butter.
  2. Melt the butter in a microwave-safe bowl in 20-second bursts. Let cool for 1-2 minutes.
  3. In a medium mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth, about 30 seconds.
  4. Add the egg and vanilla extract. Whisk vigorously until the mixture is thick and glossy, about 1 minute.
  5. Fold in the flour, baking powder, and salt with a spatula until just combined. Do not overmix.
  6. Reserve ¼ cup of candy corn for the top. Fold the remaining ¾ cup into the batter gently.
  7. Scrape the batter into the prepared pan and spread into an even layer.
  8. Press the reserved candy corn gently into the top of the batter. Sprinkle with a pinch of flaky sea salt.
  9. Bake for 20-23 minutes, until the edges are golden brown and pulling away from the pan. The center should look soft and puffed. A toothpick inserted into the center should come out with a few moist crumbs.
  10. Cool in the pan on a wire rack for at least 30 minutes before lifting out and cutting into squares.

Notes

Use fresh candy corn for best texture; stale candy corn stays hard. Do not overbake—blondies continue cooking as they cool. Flaky salt on top is highly recommended. For a 9×13 pan, double the recipe and bake for 28-30 minutes.
