This Easy Candy Corn Popcorn Bark is a quick and simple fall treat that combines salty popcorn, crunchy pretzels, sweet candy corn, and creamy white chocolate. It’s perfect for Halloween parties, Thanksgiving dessert tables, or cozy movie nights.

Ingredients

Scale
  • 8 cups popped popcorn (about 1/2 cup unpopped kernels or one standard bag of microwave popcorn)
  • 1 ½ cups pretzel sticks or mini pretzels, broken into bite-sized pieces
  • 1 ½ cups candy corn
  • 12 ounces white chocolate chips or melting wafers
  • 1 tablespoon coconut oil or vegetable shortening (optional)
  • ½ cup salted peanuts or roasted almonds (optional)
  • ½ cup dried cranberries or chopped dried apricots (optional)
  • Flaky sea salt (optional)

Instructions

  1. Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.
  2. Pop the popcorn according to your preferred method. Let cool slightly, then remove any unpopped kernels. Place the popped popcorn in a large mixing bowl.
  3. Add the broken pretzel pieces and 1 cup of the candy corn to the bowl with the popcorn. Gently toss to combine. Reserve the remaining ½ cup of candy corn for the top.
  4. Place the white chocolate chips and coconut oil (if using) in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each, until completely smooth and melted (about 1-2 minutes total).
  5. Pour the melted white chocolate over the popcorn mixture. Gently fold with a rubber spatula until everything is evenly coated.
  6. Transfer the coated mixture to the prepared baking sheet. Spread into an even layer using a spatula or the back of a spoon.
  7. While the chocolate is still wet, sprinkle the remaining ½ cup of candy corn and any optional toppings over the top. Gently press them into the chocolate.
  8. Place the baking sheet in the refrigerator for at least 30-45 minutes, or until the chocolate is completely firm and set. Alternatively, let set at room temperature for 1-2 hours.
  9. Once set, lift the parchment paper to remove the bark from the pan. Break into irregular, bite-sized pieces.

Notes

Use good quality white chocolate to prevent seizing. Work quickly once chocolate is melted. For best texture, let bark sit at room temperature for 5-10 minutes after refrigerating before breaking. Store in an airtight container at room temperature for up to 1 week. Can be frozen for up to 3 months.
