These Easy Copycat Lunchable Pepperoni Pizza Bites are exactly what you remember, except better. They’re fresher, cheesier, and somehow even more satisfying than the original.

  • 2 ¼ cups all-purpose flour
  • 1 packet active dry yeast (about 2 ¼ teaspoons)
  • 1 teaspoon sugar
  • ¾ teaspoon salt
  • ¾ cup warm water (around 110°F)
  • 2 tablespoons olive oil
  • ½ cup pizza sauce
  • 1 ½ cups shredded mozzarella cheese (low-moisture, part-skim)
  • 3 ounces pepperoni slices (about 3035 slices)
  • 1 tablespoon olive oil (for brushing)
  • ½ teaspoon garlic powder (optional)
  • ¼ teaspoon dried oregano

Instructions

  1. Activate the yeast. In your mixing bowl, combine the warm water, sugar, and yeast. Give it a gentle stir and let it sit for 5 minutes until it gets foamy on top.
  2. Make the dough. Add the flour, salt, and olive oil to the yeast mixture. Stir with a wooden spoon until a shaggy dough forms. Then use your hands to bring it together into a ball. Knead the dough in the bowl for about 3 minutes until it feels smooth and elastic.
  3. Let the dough rest. Cover the bowl with a clean kitchen towel and let it rest for 10 minutes. While it rests, preheat your oven to 400°F and line your baking sheet with parchment paper.
  4. Pre-cook the pepperoni. Place the pepperoni slices in a small skillet over medium heat. Cook for about 2 minutes per side until the edges start to curl and the grease renders out. Transfer the pepperoni to a paper towel-lined plate to drain.
  5. Roll out the dough. Lightly flour your work surface and roll the dough out to about ¼-inch thickness.
  6. Cut out the circles. Use your 2-inch cookie cutter or glass to cut out as many circles as you can. Gather the scraps, re-roll the dough, and cut more circles. You should get about 24-30 circles total.
  7. Assemble the pizza bites. Place the dough circles on your prepared baking sheet, spacing them about 1 inch apart. Spoon about ½ teaspoon of pizza sauce onto each circle. Top with a pinch of shredded mozzarella (about 1 teaspoon per bite). Place one pre-cooked pepperoni slice on top of each cheese mound.
  8. Brush and season. Mix the olive oil with the garlic powder and brush the tops of the pizza bites. Sprinkle a tiny pinch of oregano over each one.
  9. Bake. Bake at 400°F for 10-12 minutes, or until the edges are golden brown and the cheese is bubbly and slightly browned. Let them cool on the baking sheet for 2 minutes before transferring to a wire rack.
  10. Serve warm or at room temperature. These are best within 30 minutes of baking, but they’re still good at room temperature for a few hours.

Notes

Don’t skip pre-cooking the pepperoni to avoid soggy bottoms. Use low-moisture mozzarella for best results. For extra crispy bottoms, flip the bites during the last 2 minutes of baking.
