Easy Copycat Starbucks Egg Bites for School Breakfast

These fluffy, portable egg bites are a perfect grab-and-go breakfast for busy school mornings. Made with simple ingredients like eggs, cottage cheese, and your favorite mix-ins, they mimic the Starbucks version without the need for a sous-vide machine.

  • 6 large eggs, room temperature
  • 1/2 cup small-curd cottage cheese
  • 1/3 cup shredded sharp cheddar cheese
  • 4 strips cooked bacon, crumbled
  • 1/2 cup chopped fresh or frozen-thawed spinach
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • Non-stick cooking spray or butter for greasing

Instructions

  1. Preheat your oven to 375°F (190°C). Place your muffin tin on the middle rack while it preheats.
  2. Cook your bacon until crispy. Let it cool, then crumble into small pieces.
  3. In a blender, combine the 6 eggs, 1/2 cup cottage cheese, 1/4 teaspoon salt, and 1/8 teaspoon pepper. Blend on high for about 30 seconds until completely smooth and slightly frothy.
  4. Pour the blended egg mixture into a large mixing bowl. Add the 1/3 cup shredded cheddar, crumbled bacon, and 1/2 cup chopped spinach. Stir gently until evenly distributed.
  5. Carefully remove the hot muffin tin from the oven. Immediately spray each cup generously with non-stick cooking spray.
  6. Pour the egg mixture into the prepared muffin cups, filling each about 3/4 full.
  7. Place the filled muffin tin back in the oven. Bake for 15-18 minutes, until the egg bites are set and the tops are lightly golden. A toothpick inserted into the center should come out clean.
  8. Let the egg bites cool in the pan for 5 minutes. Then, run a small rubber spatula or butter knife around the edges of each cup to loosen them. Gently lift them out and transfer to a cooling rack.
  9. Enjoy immediately while warm and fluffy, or let them cool completely before storing.

Notes

Don’t skip blending the cottage cheese and eggs for a silky texture. Use room temperature ingredients for best results. Grease the muffin tin generously to prevent sticking. Let the egg bites cool in the pan for 5 minutes before removing. For freezing, cool completely, flash-freeze on a baking sheet, then transfer to a freezer bag for up to 3 months.
