  • 1 large head Romaine lettuce, washed and chopped
  • 1/2 cup freshly grated Parmesan cheese

  • 2 tablespoons fresh lemon juice
  • 1 teaspoon anchovy paste (optional)
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Carefully peel the skin off about 2 cups of rotisserie chicken, reserving the skin separately. Shred the chicken meat into bite-sized pieces.
  2. Heat a non-stick skillet over medium heat. Place the chicken skin flat in the pan and cook for about 3-5 minutes per side, or until golden and crispy. Remove and drain on paper towels.
  3. Rinse and dry the Romaine lettuce, then chop into roughly 2-inch pieces. Use a salad spinner if available to avoid soggy leaves.
  4. In a small bowl, whisk together mayonnaise, lemon juice, anchovy paste, Dijon mustard, minced garlic, and Worcestershire sauce. Slowly drizzle in olive oil while whisking to emulsify. Season with salt and pepper to taste. Add a teaspoon of water if dressing is too thick.
  5. In a large bowl, combine chopped Romaine, shredded chicken, and croutons. Pour over the dressing and toss gently to coat evenly.
  6. Transfer the salad to serving plates or a large bowl. Sprinkle grated Parmesan cheese over the top and crumble the crispy chicken skin on top for extra crunch and flavor.
  7. Serve immediately to enjoy the crisp textures and fresh flavors.
